Garlic Parmesan Mushroom Zoodles

Prep Time: 5 minutes
Cook Time: 20 minutes
How to Cook:
  1. Heat oil in pan
  2. Throw in the mushrooms and sauté for about 10 mins
  3. Add in garlic, pine nuts and salt and continue frying for 5 mins
  4. Add in the zoodles, and let it cook for 3 mins (or longer if you prefer it more cooked)
  5. Add in the chopped basil, half of the parmesan cheese, and chilli flakes to mix
  6. Season to taste
  7. Remove from pan and transfer into a shallow bowl
  8. Add the fresh tomatoes (cut in half), and drizzle with balsamic vinegar
  9. Squeeze lemon juice to brighten it up if you like
  10. Garnish with the remaining parmesan and the basil leaves

  • 3 tbspn of Evoo
  • 4 garlic cloves, pressed or minced
  • 1 large zuchinni, spiralised
  • 3 cups of sliced shrooms
  • 5 cherry tomatoes, halved
  • 1/4 cup Parmesan / Percorino, grated
  • 1/4 cup of Pine nuts
  • Salt to taste
  • 1 tsp Chilli flakes
  • 2tsp Basil leaves, chopped
  • Basil leaves for garnish
  • Fresh squeeze of lemon (optional)
  • Shrimp or chicken (optional for protein)
